Baked Cobbler Oats Breakfast
Cobbler for breakfast?….YES PLEASE!! This Baked Cobbler Oats Breakfast is a comforting and healthy way to start the day. Put away those cereal bowls and preheat the oven for this delicious breakfast for two, (or one!😉) This is meant to be baked in a small dish. I used a 5 x 7 (pictured above) and also a round 6 inch diameter dish, both turned out great. You could also use a small cast iron skillet. The fruit you choose can be versatile. I used fresh plums, but you can also use peaches, apricots, or fresh figs or get creative with what you have in season.

Ingredients:
1/3 heaping cup old-fashioned oats
1/2 tsp baking powder
1 tbsp honey (plus extra for drizzle)
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/2 cup plant-based milk (I used almond)
1/8 tsp salt
1 fresh plum, peach, apricot or a few figs
Small handful of chopped pecans or walnuts (optional)
How to make baked oats
Instructions:
Preheat oven to 375℉ / 190℃
In a small bowl, blend together all ingredients except for fresh fruit and pecans.
Transfer oat mixture to oven safe dish or ramekins.
Slice fruit and place on top of batter, then sprinkle with pecans and pinch of oats, if desired.
Drizzle a small amount of honey over top of fruit and bake for 20-24 minutes, depending on size of cooking vessel.
Remove from oven and allow to cool 3 minutes before enjoying.
Enjoy with a morning cup of coffee or tea!
