Cool down on a hot summer day with these refreshing Watermelon Mint Popsicles. Hydrating watermelon, cooling mint and a delicious burst of blueberries for a delicious frozen summertime treat. Learn how to make these watermelon popsicles with my easy recipe using only three ingredients. This recipe makes 4 large popsicles.
The mint flavor is added using Nature’s Flavors Organic Blue Mint Flavor Syrup and is vegan, gluten free, and has no artificial flavors, colors, sweeteners and preservatives.

How to make watermelon mint popsicles
Ingredients:
1/3 cup fresh or frozen blueberries
3 1/2 cups watermelon, cubed (and seeds removed as much as possible)
Instructions:
In a smoothie cup or blender, add watermelon and mint flavor syrup and blend together for 30-40 seconds.
If mixture still contains some seeds, you can use a mesh strainer to remove seeds and transfer to a funnel spout cup for easy pouring.
Evenly distribute blueberries in the bottom of each popsicle mold.
Pour watermelon mint mixture into each mold, leaving about 1/4-inch space from top to allow for expansion when freezing.
Place lids on mold and freeze for at least 2-3 hours.
How to unmold popsicles:
You can set them out for a few minutes to help with unmolding, however a method that I find works best, is to fill up a container to almost the height of the pops with warm (NOT hot) water and let set for about 20-30 seconds.
