with a Strawberry Vinaigrette

We are smack dab in the middle of strawberry season here in North Carolina and the season is yielding plump and juicy strawberries that are perfect for creating a variety of recipes, like this Strawberry Citrus Salad. If you’ve never tried strawberries on a salad, you are in for a treat. Mandarin oranges, red onions and fresh spinach are a delicious accompaniment, and for added flavor and protein it’s topped with toasted pecans and slices of hard-boiled eggs.
Easy, simple, nutritious and delicious. However, what makes this salad extra special is the homemade Strawberry Vinaigrette, made with fresh strawberries, red onions, Dijon mustard, balsamic vinegar, olive oil and a little of Nature’s Flavors Organic Strawberry Syrup for an added burst of strawberry flavor.
Nature’s Flavors Organic Strawberry Syrup is made with pure cane sugar and none of the artificial. It does not contain dextrose or high fructose corn syrup, which is a huge selling point for me, as I am highly sensitive to corn.
How to make Strawberry Citrus Salad
Let’s begin!
Ingredients:
For Salad:
Spinach
Red Onion, chopped
Fresh strawberries, hulled and sliced
Fresh mandarin orange slices
Toasted pecans
Hard-Boiled eggs, sliced (find my recipe HERE)
Optional: Feel free to add a cheese topping, goat or feta would pair nicely with the strawberries and citrus.
How to make Strawberry Vinaigrette
For Strawberry Vinaigrette: (makes approximately 8 ounces)
3-4 fresh strawberries, hulled and roughly chopped
1/4 cup olive oil
3 tbsp balsamic vinegar
1 tbsp Dijon mustard
(1) 1/2 slice of red onion
1/4 tsp black pepper
Instructions:
Add all vinaigrette ingredients to a food processor or blender and puree or blend on high for one minute.
Transfer into a pouring container or store in fridge, covered, until ready to use. How long will homemade vinaigrette last? My homemade Strawberry Vinaigrette will stay fresh up to 4 days when refrigerated.
To build your salad, add a layer of fresh spinach to a plate and top with all other salad ingredients.
Drizzle Strawberry Vinaigrette over top and enjoy!
